Normally, EOES 2021 would have taken place in Szeged (Hungary), but due to COVID issues, a plan B was adopted, with the Olympiad physically taking place at the same time in each participating country.

The questions, as well as certain raw materials, were supplied by Hungary, but the local organizers had to take care of the practical realization. Numerous contacts with Hungary via e-mail and Zoom meetings ensured that everything went smoothly and in an orderly manner.

The assignments - with biological, chemical and physical components - revolved around two themes: 'Honey' and 'Tisza, the Blonde River'.

Whoever says 'honey' naturally thinks of bees. The anatomy and physiology of bees, their life cycle and their behaviour were discussed. Furthermore, the students had to investigate the influence of temperature on the viscosity of honey and they had to use fluorescence spectroscopy to find out how much cane syrup was present in a diluted honey sample. Finally, they determined the antioxidant activity of phenolic compounds in honey, calculated the ascorbic acid equivalent of three antioxidants and examined the influence of sugar concentration on yeast cell growth.

The second major task had to do with the Tisza, the river that flows through Szeged. It was established that, due to climatic changes, Hungary is experiencing increasing drought. This was the starting point for a study on drought-resistant crops. Furthermore, the participants had to determine the nitrite contamination in various water samples and determine the possible causes of the contamination. Also peculiar physical properties of granular materials, such as sand, were studied. The particle size of sand, for example, was investigated by sending laser light through a watery suspension with sinking sand.

The tasks were certainly not easy, though every year we are pleasantly surprised by the results of the participants!

All mentors unanimously agreed that both the organizing board and the scientific committee deserve praise for the development of the beautiful assignments and for their tireless efforts.
